When Old El Paso contacted me to ask if I would like to develop a recipe for Cinco de Mayo, I couldn’t wait to accept. We love Mexican food, and even have a daughter that was born on May 5th. She always thought all the Cinco de Mayo celebrations were for her! *wink!*

Our family has enjoyed Mexican and TexMex dishes for years now. When our large extended family gets together, we will often have taco salad as it is a relatively easy meal to prepare and its components can be divided up among different people to bring.
Someone usually brings a particular favorite – guacamole. Everyone seems to love the freshness and creaminess of the avocado! In fact, avocados are so popular at parties and festivities that people across the United States enjoy more than 1.3 billion pounds of avocados per year.
Did you know that the avocado even has its own website? Who knew?!? You can discover all kinds of cool avocado facts at the Avocados from Mexico website! Is there a fruit more versatile than the avocado (did you know it is a fruit?)? You can slice it, dice it, smash it, or serve it whole. It tastes great at breakfast, lunch, and dinner, or as a satisfying snack any time of day. And the best part is, you get the same nutritional boost whether you serve it on a sandwich, mix it into a dip, blend it into a smoothie, or eat it all by itself.
I wanted to give these tacos a different twist, so I decided to pair the tacos with an Avocado Salsa made with Avocados from Mexico!
Start with a crunchy taco dinner kit from Old El Paso. I LOVE the one with the flat-bottomed taco shells. It’s so much easier to work with a taco that doesn’t keep falling on its side all the time!
- Taco Dinner Kit from Old El Paso
- 1 lb lean ground beef
- refried beans
- shredded cheese
- sour cream
- 1- avocado, cubed
- 1/2 c. whole kernel corn
- 1 c. petite diced tomatoes (may use canned, drained)
- 1 t. lime juice
- 1 head iceburg lettuce
- 1/2 c. bottled ranch dressing
- 1/2 t. taco seasoning
- Prepare ground beef according to directions in the Taco Kit, reserving 1/2 t. of the taco seasoning
- Remove pit and slice avocado into cubes.
- Combine tomatoes, corn and lime juice. Gently fold in avocado.
- Into taco shells spoon meat, beans, cheese, salsa and top with sour cream.
- For salad wedges, quarter (and then quarter again, if desired) head of lettuce.
- Whisk 1/2 t. taco seasoning into 1/2 c. ranch salad dressing, drizzle over wedges.
