We are HUGE college football fans. Any given fall Saturday, you will find us either in front of the big screen or sitting in the stands cheering for our alma mater. When we’re in front of the big screen, great snacks are a must… and here’s where the Coca-Cola Cupcakes come in!
College football is almost a religion in my state. You really can’t be on the fence – you have to choose one team or the other. Our team, the Auburn University Tigers, is also our alma mater. My husband and I met there, and it was our first home as a young married couple. So we have a great attachment to the ‘loveliest village on the plains’. Even the gorgeous sunsets there echo the Auburn team colors… a brilliant orange and blue!
The Auburn community, as well as the campus, is such a wonderful family and just to visit there or attend a game is a real treat. The excitement is palpable!
A great tailgating experience goes with college football like cheese and crackers. That’s when awesome family memories are made. One thing that we’ve discovered is that you don’t have to actually go to the game to have a fun tailgate party. You can ‘tailgate’ at home and make memories with your family and friends, without leaving the comfort of your own home and the 50-yard-line seats in front of your big screen!
For this simple tailgate, I provided a ‘RITZ-wich bar’, featuring everybody’s favorite – RITZ crackers – with sandwich meats and cheeses. I cut ham and turkey, and cheddar and colby-jack cheeses, into RITZ-size circles with my biscuit cutter and presented on an oblong tray along with RITZ crackers. To finish things off, I made my favorite coca-cola cake – with a twist… Coca-Cola Cupcakes with Cream Cheese Frosting.
Coca-Cola Cupcakes with Cream Cheese Frosting
Coca-Cola Cake has been a staple in the south for years! I adapted my recipe from the one shown on the Coca-Cola website. We love our Coca-Cola Classic as much as we love sweet tea, and these cupcakes are the perfect tribute to this beloved soft drink.
For the ingredients, I visited my local Kroger store (I’m a Kroger girl from waaaay back!) where I found my ingredients with no problem. You can check this link to find the store closest to you: Kroger banner stores.
So, without delay, here is my recipe:
You start by mixing the dry ingredients together in a large bowl. Then, in a saucepan, combine the Coca-Cola, cocoa and butter and bring to a boil. Pour into bowl of dry ingredients and stir just till combined.
In separate bowl, whisk together the eggs, buttermilk and vanilla. Add to other mixture, whisk or stir till combined.
Pour into cupcake liners and bake at 350 degrees for about 20 minutes, until a toothpick inserted comes out clean. Cool and frost with cream cheese frosting and garnish with sparkling white sugar and a straw cut into thirds. I wanted the cupcake to resemble a glass of Coca-Cola with foam on top!

- 2 Cups sugar
- 2 Cups all-purpose flour
- ½ Teaspoon salt
- 1 Teaspoon baking soda
- 12 oz Coca-Cola
- ½ Cup butter or margarine
- 3 Tablespoons cocoa
- ½ Cup buttermilk
- 2 eggs
- 1 Teaspoon vanilla extract
- --------------------------------------
- For Cream Cheese Frosting:
- 1- 8oz. package cream cheese, softened
- 1 stick butter, softened
- 1 box confectioners sugar
- 1 tsp vanilla extract
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine the sugar, flour, salt and baking soda.
- In medium saucepan, mix the butter, cocoa and Coca-Cola. Bring just to a boil.
- Pour over dry ingredients; blend well.
- In separate bowl, whisk together eggs, buttermilk and vanilla extract.
- Pour into large bowl of other ingredients and mix well.
- Pour into cupcake cups (2/3 full) and bake for 18-22 minutes, or until toothpick inserted comes out clean.
- Cool before frosting with cream cheese frosting.
- For Cream Cheese Frosting:
- With mixer, cream together butter and cream cheese.
- Add in powdered sugar, 1 cup at a time.
- Add vanilla extract and mix until blended.
These cupcakes are so moist, and perfect paired with the cream cheese. And of course, the perfect beverage pairing with them is a glass of Coca-Cola Classic. I had fun shooting this photo while pouring the cola into a tall glass!
