Ah, oui. My fascination with all things French has taken hold of me today! We enjoyed this delicious GF Chicken Cordon Bleu for dinner and it brought out my limited French from high school and college!
My mastery of the French language might disappoint, but this recipe for Chicken Cordon Bleu certainly will not! I’m going to take you through step by step:
Trim all fat off 2 or more skinless, boneless chicken breasts.
Pound between 2 layers of plastic wrap until roughly 1/4 inch thick.
Layer 1-2 slices ham (depending upon how thick the slices are) and a couple of thin slices of Provolone (I used smoked – yummy!!).
Fold the chicken in half, or roll up. I used a mallet to kind of seal the edges. Melt 1/2 stick butter in a bowl.
Dip or brush butter onto chicken, then quickly place in dish with potato flake mixture.
Place on baking sheet prepared with aluminum foil sprayed with non-stick spray (I line my pan with foil because it’s nice to just throw the foil out instead of wrestling with a baked on mess – I’m lazy that way!). Drizzle remaining melted butter on top of chicken.
Bake in 350 degree oven for 45 minutes. Then enjoy!!

- 1/4 cup grated parmesan cheese
- 1 tsp seasoning blend
- 2-4 slices deli ham
- 4 slices smoked provolone cheese

- Combine potato flakes, parmesan cheese and seasoning blend in a bowl.
- Melt 1/2 stick butter in another bowl.
- Dip or brush butter onto chicken, then quickly place in dish with potato flake mixture to coat.
- Place on baking sheet prepared with aluminum foil sprayed with non-stick spray.
- Drizzle remaining melted butter on top of chicken.
- Bake in 350 degree oven for 45 minutes, until light golden brown. Enjoy!!
This is soooo good, you can serve it to guests and they’ll never know how easy it really was! For dinner at home, serve with mac ‘n cheese and broccoli. For guests, pair it with asparagus and roasted potatoes. It’s delicious, no matter what you put with it!
