There’s just something about salted caramel that works. Coarse sea salt seems to be the perfect compliment to the sweetness of caramel. The other day, we wanted a little something sweet to finish off our dinner, and I had a bag of my favorite chocolate chip cookies on hand. I also had our favorite ice cream in the freezer! So I dreamed up these Salted Caramel Ice Cream Sandwiches. It’s one of those marriages made in heaven!
Here’s how to make them:
Set the ice cream out on the counter to soften at room temperature for a few minutes. Working on waxed paper, scoop out some of the softened ice cream and smoosh between two cookies. Don’t smoosh too far – just until the diameter of the ice cream matches up to the edges of the cookies. Freeze for a few minutes while preparing caramel. Just before serving, melt a few caramels and 1 teaspoon water in a pyrex cup, for 30 seconds. Stir. Microwave at 10 second intervals until smooth. Take sandwiches from the freezer and drizzle with melted caramel. Top with sprinkles of sea salt immediately, before caramel sets.
This ice cream sandwich is so good, it belies it’s simplicity. It’s perfect for summer. It lends itself to adaptation, too. You could use a sugar cookie with orange or pineapple sherbet. You could use a chocolate cookie with mint chocolate chip ice cream. A snickerdoodle cookie with butter pecan ice cream. Oh, dear… I’d better stop thinking up combinations – this is going to get me into trouble!!

Ingredients
- 4 chocolate chip cookies
- vanilla ice cream
- 5 or 6 caramels
- 1 teaspoon water
Instructions
- I don't think you really need me to tell you how to do this, but here goes:
- On a piece of waxed paper, squeeze a scoop of ice cream between two cookies.
- Freeze for a few minutes while preparing caramel.
- Melt caramels with water, in a pyrex cup, in the microwave at 100 % power, beginning with 30 seconds, and at 10 second intervals after that.
- Stir until smooth.
- Drizzle over sandwiches.
- Sprinkle coarse sea salt on top immediately.
- Enjoy!
