This is the meatloaf recipe that I’ve been using for about 30 years. I don’t remember ever getting it from a cookbook, but concocting and perfecting it through trial and error. Now I especially love it because it’s totally gluten-free!
The Meatloaf:
1 lb. ground round
¾ c. oats
1 egg
½ c. milk
1T GF soy sauce
½ tsp Mrs. Dash
Pinch of sea salt
For the sauce:
½ c. ketchup
Dash of soy sauce
1T brown sugar
In mixing bowl, whisk egg with soy sauce, milk and seasonings. Add oats. Let oats absorb liquid while you spray a baking dish lightly with cooking spray.
Add ground round to oat mixture. Mix together. (I use a potato masher. As a young bride I never wanted to get my rings all messy, so that’s just the way I got around using my hands! What can I say…I’ve been doing it that way ever since! )
Turn out onto dish and form into a ring (I find that the loaf bakes more evenly this way).
Make the sauce by combining ketchup, brown sugar and a splash of soy sauce in a measuring cup. I usually zap this mixture in the microwave for about 15 seconds and stir just to melt the sugar).
Top the loaf with sauce and bake 50 minutes at 350 degrees.
This is really a very simple recipe, but quite tasty. You could also add chopped onions or green peppers if you like. I also use this recipe when I make stuffed bell peppers.
