You may remember that awhile back I mentioned that I belong to a local produce co-op. Well, not long ago we got a particular basket (it varies each week) with a wonderfully Latin assortment of veggies! There were Roma tomatoes, cilantro, onion, and mangoes along with the usual bananas, pineapple and other veggies.
So it was the perfect time for a refreshing mango salsa! Don’t you just love homemade salsa??

Tomato Mango Salsa
Tomato-Mango Salsa
This refreshing Tomato-Mango Salsa has just the right sweetness-to-savory ratio! Perfect for Cinco de Mayo, tailgating ... or any occasion!

Ingredients
- 4 or 5 Roma tomatoes, chopped
- 1 mango, chopped
- 1 small onion, minced
- 1 Tblsp chopped fresh cilantro
- 1 tablespoon fresh lime juice
- Salt and pepper to taste
Instructions
- Combine all ingredients in serving bowl and enjoy with tortilla chips or over fish or chicken!
It turned out soooo good! And I like my salsa a little finer than some, so I chopped some of my veggies in my Cuisinart Mini-Prep Plus.
