This Covid lockdown has a lot of people singing the blues. A great way to fend off the doldrums is to make something delicious, like an easy Lemon Pie.
I can remember my momma making a similar pie years ago. She made a lemonade pie. I’ve made that too, but last time I made one, it was way too sweet and was a bit too tangy for my taste. So I went back to this classic 4-ingredient confection.
There is something SO refreshing about a lemon pie! This pie just melts in your mouth and the filling is the perfect compliment to the graham cracker crust. It’s even easy to adapt for a gluten-free version… just use a GF pie crust like this one from Whole Foods. The other ingredients are naturally gluten-free.
Here’s my method: Juice the lemons into a mixing bowl. I love this juicer I got not too long ago. It’s very effective at squeezing all the juice, while keeping seeds out of the bowl. I also like that it’s great exercise for my hands!
Using an electric mixer, mix in the sweetened condensed milk. Then add the thawed whipped topping at low speed. Pour into graham cracker crust and let chill at least 1 hour. There you go! Easy as pie! It’s true – this one really is!
Ingredients
- Juice of 3 lemons
- 1 can sweetened condensed milk
- 1 carton whipped topping (8 oz)
- 1 prepared graham cracker crust
Instructions
- In mixing bowl, combine lemon juice with sweetened condensed milk with hand mixer. Add whipped topping at low speed until blended. Spoon into graham cracker crust. Chill 1 hour and enjoy!
